-Great Dining in Scottsdale at Proof Canteen at the Four Seasons Scottsdale Troon North-
Proof Canteen at the Four Seasons in North Scottsdale has been getting a lot of well-deserved press in the year it has been open. A couple of weeks ago we took advantage of a gorgeous sunny day and headed over of lunch on the patio.
Just walking up to Proof, you get to see the amazing Sonoran desert landscapes and Pinnacle Peak in the distance. Upon entering, there is a large well-designed room that has a long shuffleboard table that looks like it gets some fun action. Over in the far corner there is a true-blue soda fountain.
Because it was such a nice day, we opted to eat outside. The outside patio is large and comfortable and has a good mix of sunny and shaded areas
Our server, Katia, could not have been friendlier and when she heard it was our first time there, happily walked us through the menu highlights. We also had several other employees stop by to check on us throughout the meal.
We started with the pretzel knots, which came hot and toasty and accompanied by a spicy cheese dip will. They were excellent and did not last long.
We also had some fried green tomatoes with a crab remoulade sauce. The locally-sourced tomatoes were encrusted in cornmeal and although fried, were not greasy. The crab remoulade on top was creamy and delicious with chunks of crabmeat. This dish also disappeared quickly.
For lunch, there is a good selection of salads, sandwiches and entrees to choose from. I opted for the “chop & pop” salad with smoked chicken. The chop & pop salad comes without greens and instead is a generous portion of brightly-colored chopped vegetables like purple cauliflower, flavorful peppers, grape tomatoes and more. It comes interspersed with popcorn, feta and a green goddess dressing. The smoked chicken addition brought a whole other level of flavor. This is definitely one I want to try again.
My companion had Proof’s version of a Philadephia cheese steak called the “straight out of philly.” It was a very hearty sandwich and came with a side of homemade potato chips. She enjoyed it quite a bit and even had a generous portion to take home.
Our server also introduced us to a drink I had not seen before. It was called dry cucumber soda and it was a carbonated water infused with cucumber. I really enjoyed it and they have other flavors as well, like lavender.
On our way out, we walked over to look at the impressive and fun soda fountain area. You can opt for floats, shakes, sundaes or ice cream and there are toppings galore. On many Sundays afternoons, they have a “Sundaes on Sunday” special where it is buy one, get one free. If you are not into ice cream, they also have good selection of freshly baked goods as well.
Proof Canteen lived up to the great reviews I had seen and we will definitely be back for more visits.
